Recipe: Sesame Tangerine Tuna

A mixture of Oriental and Southern Florida style has a stunning combination of flavors - tuna, soaked in a fresh tangerine juice sauce blended into an almost teriyaki marinade, and grilled to perfection
.
Serves: 4 Time: 45 minutes with marinating time
Ingredients
4 tuna steaks - about 1.5 lbs - cut 1/2 inch thick
MARINADE:
1/4 cup soy sauce
1/4 cup fresh squeezed tangerine juice
4 strips (1/2 inch each) tangerine zest
3 tablespoons honey
2 tablespoons sesame oil
3 cloves of garlic - minced
2 scallions - trimmed with white part minced finely and green part finely chopped (save green part for garnish)
1 tablespoon fresh ginger - minced
3 strips lemon zest (1/2 inch ea)
1 whole star anise
OTHER:
1 tablespoon sesame oil for brushing the tuna
2 tablespoons toasted sesame seeds (place in dry skillet over medium heat and shake over burner until seed aromatic 1-2 minutes)
How to make it
Preheat a BBQ grill to very hot.
Rinse the fish steaks and pat dry
Whisk together all marinade ingredients in a shallow mixing bowl.
Please tuna steaks in non reactive baking dish and pour marinade on top.
Marinate, covered in refrigerator for 30 minutes (or longer to taste), turning them once or twice.
Drain tuna steaks and blot dry.
Brush with the sesame oil and grill for 1 minute per side, or until cooked to taste
Remove from grill to serving plates, sprinkle the fine chopped scallion greens and sesame seeds, and serve
